Homemade Tomato Soup

When I get in a funk, cooking always seems to help me snap out of my bad mood.

I've spent the past 2 days in my kitchen (you know....when I'm not wiping poopy butts, picking up toys, doing laundry, cleaning up spilled milk, cleaning the house for showings, eating pretend food that the littles have made for me in their pretend kitchen, playing Candyland and Pop The Pig- and losing might I add! ha!)

I turn on Pandora and worship my heart out while my kids yell at me to turn my music down! ha!

Below is a recipe that I found and wanted to try. I modified it a bit to fit our likes- so here is my version of Cream of Tomato Soup:

4 cups of chicken broth
3 large tomatoes- peeled and diced
2 cups of tomato puree- I used Hunts tomato sauce
2 Tbsp garlic powder
pepper- I don't measure- I just dump
2 Tbsp Honey
1 c heavy cream
3/4 stick butter (we like our butter here in the Haskins' House!)

In a large pot combine chicken broth, tomatoes, puree, garlic powder, and pepper. Simmer for 1 1/2 hours.

Pour soup into a blender (I had to do 1/2 at a time to fit my blender). (I put the blended soup into a giant tupperware bowl) Add 3/4 stick of butter and let melt. Add cream and stir.

Serve hot.

(I am in the process of making homemade italian herb bread in the bread maker to go along with it.)

The perfect soup for a snowy blizzardy day!

THANK YOU THANK YOU. I was just tweeting yesterday that I made soup and it was a disappointment. I am going to try this one, but with a change to canned tomatoes because #iceOMG-ed into the house for the second day.

I found a recipe online for tomato soup - it had alphabet pasta in it for the kids - so much fun!
I think yours sounds delicious!
