I wish I could take credit for yet another recipe that I want to share with you, but I can't. My next door neighbor brought some of this over to us about a year ago, and it has been a hit at the Haskins' household ever since.
This recipe is an amazing sweet treat that the entire family will love to munch on.
You will need:
1 box of your favorite Chex Mix cereal
1 cup of brown sugar
1/2 cup butter or margarine
1/4 cup light corn syrup
1/4 teaspoon baking soda
1 cup mini M&M's (don't use the regular sized ones- they are too chocolaty and take away from the taste of the sweet candied goodness!)
A roasting pan
Heat the oven to 250 degrees. Spray the roasting pan with nonstick cooking spray.
Pour the cereal into the roasting pan.
In a sauce pan, stir together the brown sugar, butter, and corn syrup. Stir while cooking over medium heat until the mixture starts to boil. Let boil for 1 minute while stirring constantly. Remove from heat and stir in the baking soda.
Pour the hot mixture over the cereal in the roasting pan until it's evenly coated. This may take some stirring of the cereal (which sometimes crushes it into small pieces which is OK!).
Bake the coated cereal for 40 to 50 minutes, stirring every 10-15 minutes until the coating is set.
Let stand for 5 minutes and then stir in the M&M's. (you need to wait until it's cooled or you will have a chocolaty mess).
Let the mixture cool some more and then break the cereal into pieces. It stores nicely in Glad or Ziploc plastic containers or in Ziploc bags.

MMMMM!!! this sounds yummy! Too bad I am not leaving the house today to go get the syrup!! Maybe another time. I think we'll make snow cream today, though!!

Sounds amazing. I am always on the lookout for a new recipe with snacks for the short people around here. I think this would fit the bill very nicely!
