Sunday Eats

All I have to say is YUM!

Hot Chicken Salad

What you will need:
3 or 4 cups diced cooked chicken (I usually use canned chicken for convenience)
2 cans cream of chicken soup
2 cups cooked instant rice
2 cups diced celery
1/2 cup diced onion
1 tsp. salt
3/4 cup real mayonaise
2 Tablespoons lemon juice
2 cups crushed plain potatoe chips
optional- 4-6 hard boiled eggs, chopped

Directions:
(preheat oven to 350)
1. Cook rice according to directions on package
2. Mix all ingredients except for potato chips
3. Spread mixed ingredients into a 9x13 baking dish.
4. Sprinkle potato chips on top.
5. Bake uncovered for 30-40 minutes
