Beef and Rice Fiesta Bake

In an effort to avoid going grocery shopping, I had to get creative with my cooking tonight. I scoured my freezer, fridge and pantry looking for ingredients I could put together to make something somewhat edible and somewhat healthy.

I'm pleased to have created a yummy casserole that I wanted to share. (or more wanted to "write down" so I can look it up later!)

What you need:
1 lb ground beef or ground sirloin
1 yellow pepper chopped
1 green pepper chopped
3 cups of instant white or brown rice (I prefer brown rice)
jar of salsa
1 packet of taco seasoning
1 Tbsp adobo seasoning (optional)
1 small bunch of fresh cilantro finely chopped
1/2 brick Colby Jack cheese (shredded)


How to make it:

1. Put 3 cups of rice into a microwave safe bowl. Add 2 cups of water and 1 cup of salsa. Cook for approx. 12-15 minutes until rice is fully cooked.
2. While rice is cooking, cook the ground beef in a skillet. Add chopped yellow and green pepper and cook until meat is brown and peppers are soft. Add taco seasoning and Adobo and stir ,cooking until all liquid is absorbed. (I use ground sirloin which has a 90/10 fat content. Because of this, I don't drain the grease from the meat- if you use a higher fat meat, you may need to drain the fat.)
3. In a large casserole dish, combine rice and meat/peppers. Add any left over salsa and stir.
4. Sprinkle cilantro and shredded cheese on top.
5. Bake at 350 until cheese is bubbly.

Serves 10-12

Ha! We're on the same page today. I'm trying to clean out the fridge and came up with a tilapia concoction. It's currently baking, so I'm still waiting to see how it turns out.

If your crew likes tacos, try taco rice.

Cook up a pot of rice.

While rice is cooking, cook a pound of ground beef and add taco seasoning following packet directions. Shred some cheese, chop some lettuce and tomatoes, get some salsa and sour cream.

When your rice and meat are done, layer on a plate like so: rice, meat, lettuce, tomatoes, cheese, sour cream, olives, guac. (Anything you'd put in a crunchy taco shell or burrito, put it on rice.) Taco Rice is one of the very few foods my husband's made that I'll eat happily. Now I still don't like my veggies much so I add leftover cooked red or black beans or some refried beans instead of lettuce/tomatoes.

Makes a lot, feeds a crowd and makes great leftovers. Just layer rice, meat and cheese in a container and the lettuce, tomatoes, other goodies in a separate tub. Microwave the rice mix and add the rest on top with some corn chips to help scoop up the straggly bits.

Seriously so yum it's a standby for dinners here. We have it at least twice a month and I make it for company when I'm out of ideas. Try it!
